Wee Heavy #3 – Sheep Dreams Laddie

At least once a year I like to brew a Wee Heavy.  One batch is usually enough to last more than the year and I like to keep some for aging and comparing previous year’s versions.  In the past couple of versions I’ve used a varied complex grist with six or eight malts in an attempt to develop malt complexity in the finished beer.  The 2011 recipe was the result of an inspiration to keep it simple and move in a more traditional direction.

I’ve read articles about the Traquair House Ale (which is one of my favorite examples) having a very simple grist of mostly pale malt with a small percentage of roast barley.  Also, my father-in-law helped me dig up a copy of ‘The Scottish Ale Brewer and Practical Maltster’ from the Google archives which indicates that traditional scottish ales consisted entirely of pale malt and used a very long boil process (3 hours+).

Peach State Brew Off 2011

This year’s Peach State Brew Off finished yesterday after a week of judging the 518 entries that they received!  Covert Hops Society did an excellent job running a very successful event.  This year I was pleased to participate as both an entrant (with four beers submitted) and as a judge.

Since I live about 30-40 minutes from the judging site it was impractical for me to make it down to any of the early sessions during the week.  Traffic into metro Atlanta during rush hour is a bit prohibitive in that regard.  However, I was able to join in during both of the sessions on the actual ‘day of’ the competition.

Small Batch All-grain – Am. Amber #1

With all of the holidays coming and going along with the increased needs of work and home, it’s been a bit harder to hide out in the garage for half a day firing up the old brew rig.

So, I put together a small 2 gallon mash tun (found it discounted at Target too) and got myself a 5 gallon steel stock pot.

The mash tun uses a steel braid for the manifold connect to each end of a T fitting similar to this build.  I planned to batch sparge and estimated a maximum amount of grain at around 4.5lbs.  Mixing that grain bill with about 6qts of water was a pretty tight fit.

Dark Saison #1 – (Experimental)

Recently I’ve been reading quite a bit of the blog The Mad Fermentationist.  Particularly of interest were the three dark saisons that he has done.  I’ve often thought that the farmhouse ale style has a lot of room to play with different ingredient combinations.

So, this recipe draws from his Fig Honey Anise Dark Saison and Dark Saison with Black Cardamom.

  • 10.00 lb     Pilsner (2 Row) Bel
  • 1.00 lb       White Wheat Malt
  • 0.50 lb       Aromatic Malt
  • 0.25 lb       Carafa II
  • 1.25 oz      Amarillo Gold [7.20 %]  (60 min)
  • 0.50 oz      Amarillo Gold [7.20 %]  (20 min)
  • 1.00 lb       Buckwheat Honey (flameout)
  • 1.00 lb       Blackcurrant jam (flameout)
  • 1.00 lb       California Dates deglazed with 0.5 cups of sweet port and 1 cup first runnings
  • 1 Pkgs        Belgian Saison (Wyeast Labs #3724)

Munich Helles #1 – 8th Circle of Helles

Historical reference article.

On November 21, 2010 I brewed my second decoction mash, a Munich Helles.  This was a single decoction with a fairly standard grain bill for the style.  Simple and clean was the thought behind this one.

Wee Heavy #2 – Ol’ Thunderhead

Historical reference article.

On August 21, 2010 I brewed my second Wee Heavy.  Several comments that I received from competitions on the first batch suggested increasing complexity.  I varied the grainbill from the first batch and used some non-trdiational ingredients to attempt a more complex malt profile.
