Lambic #2 – Collaborative Brewday

After spending some time talking Lambics with Les from Brewmasters of Alpharetta and discussing the various techniques used to produce them, we decided to get together and do a collaborative brew.  Brewday was this past weekend and went fairly well.  We decided to abort our planned turbid mash since the wind was fairly strong and we were having problems with the burners.

I had saved a half pint of wort with Bugfarm V from East Coast Yeast and prepared some starters.  Half of what I had was pitched into the stirplate with fresh wort and stepped up to ~1.5L.  The rest was carefully poured into two sanitized White Labs vials on top of oak cubes that I had boiled to remove the flavor.  These vials and the oak would get pitched after primary fermentation to add the lacto, pedio and brett bugs that would be growing in the oak.

Saison #2 – Funkaliscious

For the past two weeks, I’ve been working on a yeast propagation project for this saison.  It started when I cultured up the dregs from a bottle of The Bruery’s Saison De Lente (which is a very good Saison in my opinion).  This stepped up to around an 800mL worth of starter.  Upon completion, I set it aside in a sanitized jat and started a 1L started of my Wyeast 3724 culture along with cultures saved from an Orval dreg starter.  The morning of brewing, I combined equal parts of each starter into a little more fresh wort and let it spin on the stirplate for the duration of the brewing.

Now, if you’re keeping track that potentially two saison saccharomyces strains and three brettanomyces (wild yeast) strains.  I also planned to add some fresh Lactobacillus D. starter into the wort just before pitching the yeast blend.  I also kept a small portion of the yeast blend for the next batch and pitched about 1L into the wort.

Irish Red #4

I’ve done a few Irish Red’s over the past few years.  This will be recipe number four.  I’ve decided to clean up the grain bill a bit this time as when I originally designed it I was in kitchen sink mode.  I don’t know what it is about getting ambitious late at night on a work night, but I did it again this past Monday.  I started getting everything together to brew around 8pm.  Sure, plenty of time to finish before midnight…

The plan was to fire up the big system and get a full 11 gallon batch.  Half of it is going in the 5gallon bourbon barrel from Tuthilltown Spirits.  I want to try to get at least one clean bourbon beer out of it before I really funk it up. (more…)
